This is a recipe that I pull out when I have guests over and I’m running out of time for making nibbles. It’s so quick and easy I feel quite embarrassed sharing it! Most of these ingredients you should have kicking around in your store cupboard. If you don’t have butter beans they can easily be interchanged with chickpeas, cannellini or haricot beans. Moroccan spices or za’atar can be added to give it a different flavour, have a play around!
Ingredients
250g tinned butter beans, drained
2 tbsp toasted pine nuts
1 garlic clove
60ml of extra virgin olive oil
3 tbsp tahini
sea salt to taste
Pinch of dried chilli flakes
Juice of half a lemon
1-2 tbsp cold water
Method
Place all ingredients in a blender and blitz until your desired texture. Yes, it’s that easy! Serve with flatbreads, crisps, pitta chips, toasts or crudités.
